The exam covers five domains. Two of them — Providing Safe Food and The Flow of Food — together make up about half of the exam, and they are where most candidates lose points (the time-temperature numbers), so that is where to invest first.[1] Study by weight:

Module 1 · Providing Safe Food
Domain 1, about 28% of the exam — the single largest domain. This is the “why food makes people sick” foundation: how pathogens grow, the most dangerous ones, the three kinds of contamination, and the nine major allergens. Master this and the rest of the exam makes sense.
1.1 Foodborne Illness & FAT TOM
A is a microorganism that causes illness — bacteria, viruses, parasites, or fungi. Most need six conditions to grow, remembered by : Food, Acidity, Temperature, Time, Oxygen, and Moisture. As a manager you can’t change a food’s acidity or moisture, but you can control Time and Temperature — which is why time-temperature control is the heart of food safety.[2]
The foods that most need control are (Time/Temperature Control for Safety) — meat, poultry, dairy, eggs, cooked rice and pasta, cut melon, cut leafy greens, and cut tomatoes. Pathogens grow fastest in the of 41°F to 135°F, so the manager’s job is to keep TCS food out of that zone or move it through quickly.

1.2 The Big 6 Pathogens
The exam expects you to recognize the — six highly contagious pathogens so dangerous that a food handler diagnosed with any of them must be from the operation and the regulatory authority notified.[6] Learn each one’s common food source and onset cue.

Beyond the Big 6, know that some fish toxins (scombrotoxin/histamine in tuna and mahi, ciguatera in reef fish) are not destroyed by cooking or freezing — the control is buying from approved, reputable suppliers and keeping fish cold. Spore-forming bacteria (such as Clostridium and Bacillus) survive cooking and grow if food is time-temperature abused, which is why holding and cooling matter.
1.3 Contamination & Cross-Contamination
Food can be contaminated three ways: biological (pathogens, toxins), chemical (cleaners, sanitizers, pesticides, toxic metals from unlined copper or galvanized cookware), and physical (glass, metal, bone, bandages, jewelry). is the transfer of pathogens between foods or surfaces — the classic example is raw chicken juices dripping onto ready-to-eat salad.
Prevent it by separating raw and foods, using separate or cleaned-and-sanitized equipment, and storing food in the correct cooler order — top to bottom by increasing minimum cook temperature, so poultry (the highest) sits on the bottom and its juices can never drip onto food cooked to a lower temperature.

1.4 The Big 9 Allergens
The are milk, eggs, fish, crustacean shellfish, tree nuts, peanuts, wheat, soybeans, and sesame (the ninth, added January 2023).[7] The single most important fact: cooking does NOT destroy allergens. The proteins survive heat, so a dish that suffers with an allergen must be discarded and remade — you cannot cook it off.
Prevent cross-contact with separate, cleaned-and-sanitized equipment and utensils; washing hands and changing gloves; preparing allergen-free orders separately; and clearly communicating allergens to guests. The 9th edition adds a written allergen-notification requirement (menus, signage, a QR code, or website). If a guest has an allergic reaction, call for emergency help first, then investigate how the cross-contact occurred.

2.1 Purchasing, Receiving & Storing
Buy only from approved, reputable suppliers— they’re inspected and meet applicable laws, which controls the “unsafe source” risk factor. At receiving, check temperatures: cold TCS food at 41°F or lower, hot at 135°F or higher, frozen solid (reject ice crystals or fluid stains — signs of thaw-refreeze).

In storage, rotate stock (First In, First Out), keep food at least 6 inches off the floor, and store raw meat below and away from ready-to-eat food. any RTE TCS food held over 24 hours and discard it within 7 days at 41°F or lower (prep day counts as day 1). Keep the for 90 days.
2.2 Preparation & Cooking Temperatures
Thaw food only four approved ways: in a cooler at 41°F or lower; under running water at 70°F or lower; in a microwave (cook immediately); or as part of cooking. Never thaw at room temperature. During prep, limit time in the danger zone, prevent cross-contact, and avoid bare-hand contact with ready-to-eat food (use gloves, tongs, or deli paper).
The minimum internal cooking temperatures are the most-tested numbers on the whole exam. Color is not a reliable guide — verify with a calibrated thermometer in the thickest part, away from bone and fat.[4]

2.3 Cooling, Reheating & Holding
Cooling is the most hazardous step because food passes slowly through the danger zone. Use : 135°F to 70°F within 2 hours, then 70°F to 41°F within the next 4 hours— 6 hours total. The first stage is the critical one; if food doesn’t reach 70°F in 2 hours, reheat it to 165°F and start over, or discard it.

Domain 3, about 19% of the exam. This is the manager-level domain that sets the exam apart from Food Handler: building a system to control hazards proactively — active managerial control, HACCP, a food safety culture, and the rules for the safe food handler.
3.1 Active Managerial Control & HACCP
is a proactive, planned approach where management identifies and controls the risk factors for foodborne illness before they cause harm, rather than reacting to problems.[9] It targets the FDA’s : unsafe sources, improper cooking, improper holding, contaminated equipment, and poor personal hygiene.
The structured tool for this is (Hazard Analysis and Critical Control Points) — seven principles, in order, that identify and control hazards at specific points in the flow of food.[5] The cooking step is the classic , with a like “chicken to 165°F” and a for when it’s not met.

3.2 Food Safety Culture
— the shared attitudes, values, and behaviors about food safety in an operation — gained major emphasis in the 9th edition. Managers build it through leadership (modeling safe behavior themselves), training (initial and ongoing), communication, and accountability. Staff model what they see leaders do, so a manager who skips handwashing teaches the team to skip it too.
A written food safety management system must be documented, implemented during all hours of operation, and made available to the regulatory authority on request — the proof that active managerial control is real, not just an intention.
3.3 The Safe Food Handler & Hygiene
Personal hygiene is the risk factor managers control through people. Food handlers must wash hands the right way and at the right times, avoid bare-hand contact with ready-to-eat food, and report illness so the manager can act. The key decision is vs. .[8]

Sanitize by heat (hot water or a high-temp dish machine) or by chemical sanitizer at the correct and contact time. Five factors affect a chemical sanitizer: concentration, water temperature, contact time, pH, and water hardness. Always verify concentration with a test kit, and if a solution is too weak, replace the whole batch — never just add more concentrate.

5.1 Facilities, Equipment & Pest Management
Food-contact equipment must be smooth, durable, nonabsorbent, easy to clean, and certified by an ANAB-accredited program (such as NSF). Before building or remodeling, an operation submits a plan review to the regulatory authority and must have a valid permit before opening. Water must come from an approved, potable source, and a between safe and contaminated water is prevented with an or a backflow-prevention device.

- Minimum internal temperature
- The lowest internal temperature, held for a set time, that a food must reach to destroy pathogens (e.g., poultry 165°F).
- Pathogen
- A microorganism that causes illness — the main types in food are bacteria, viruses, parasites, and fungi.
- Person in Charge (PIC)
- The individual present who is responsible for ensuring the operation follows food safety practices and can demonstrate knowledge to an inspector.
- ppm (parts per million)
- The concentration measure for chemical sanitizers (e.g., chlorine 50–99 ppm), verified with a test kit.
- Ready-to-eat (RTE) food
- Food that is edible without further washing or cooking — cooked food, washed produce, deli meats, bakery items, and garnishes.
- Regulatory authority
- The state or local agency (usually a health department) that adopts and enforces the food code and inspects operations.
- Restrict
- Allowing an ill handler to work but not handle exposed food or clean equipment (for a sore throat with fever, general population).
- Sanitizing
- Reducing the pathogens on a cleaned surface to safe levels, by heat or by chemical sanitizer.
- Shellstock identification tag
- The supplier tag on live shellfish that must be kept for 90 days for traceability.
- TCS food
- Time/Temperature Control for Safety food — food that needs time and temperature control to limit pathogen growth (meat, poultry, dairy, cooked rice, cut melon, cut leafy greens, cut tomatoes, and more).
- Temperature danger zone
- 41°F to 135°F (5°C to 57°C) — the range in which foodborne pathogens grow most rapidly. TCS food should spend as little time here as possible (about 4 hours maximum).
- Three-compartment sink
- A sink used to manually wash (≥110°F detergent), rinse (clean water), and sanitize items, followed by air-drying.
- Time as a public-health control (TPHC)
- Holding food safely using time rather than temperature: hot food discarded after 4 hours; cold food (start ≤41°F, stay <70°F) discarded after 6 hours.
- Two-stage cooling
- Cooling TCS food from 135°F to 70°F within 2 hours, then 70°F to 41°F within the next 4 hours (6 hours total).

You need to answer at least 75% of the scored questions correctly — 60 of the 80 scored questions. (A few sources cite 70%; aim well above either to be safe.) The exam is scenario-based, so applying the concepts matters more than memorizing alone.
