Module 1 · Basic Food Safety

Start here: the “why” behind every other rule. This module covers what makes food unsafe, which foods are riskiest, and the conditions that let bacteria multiply. Get this foundation and the temperature and hygiene rules in the later modules will make sense instead of feeling like memorization.

1.1 Foodborne Illness & Contamination

A is a disease carried to people by food; it becomes an outbreak when two or more people get the same illness from the same food. Most foodborne illness comes from biological — the (bacteria, viruses, and parasites) that food handlers can’t see, smell, or taste.[8]

There are three kinds of contamination: biological (germs), chemical (cleaners, sanitizers, pesticides), and physical (glass, metal, hair, bandages). The big risk factors a food handler controls are poor personal hygiene, time-temperature abuse, cross-contamination, and using food from unsafe sources.

Some people are far more likely to get sick and to get seriously ill: young children, older adults, pregnant people, and people with weakened immune systems. Food safety protects everyone, but it protects these high-risk groups most.

1.2 TCS Food & Ready-to-Eat Food

Two terms come up on almost every page of the exam. (Time/Temperature Control for Safety) is food that needs time and temperature control because it supports rapid bacterial growth — meat, poultry, seafood, dairy, eggs, cooked rice and beans, cut tomatoes, cut leafy greens, and cut melons. (RTE) is food that will be eaten without further washing or cooking — cooked food, washed produce, deli meats, bread, and garnishes.[2]

Why it matters: RTE food gets no further cooking to kill germs, so it is the most dangerous food to handle with bare hands. And to stay safe, food must come from an and be rotated by — use the oldest, soonest-to-expire stock first.

1.3 How Bacteria Grow (FATTOM)

Bacteria need six things to grow, remembered by the acronym : Food, Acidity, Temperature, Time, Oxygen, and Moisture. As a food handler you can’t easily change a food’s acidity, oxygen, or moisture — but you can control temperature and time, which is exactly why the rest of this guide focuses on them.

What is a ready-to-eat food?

Module 2 · Personal Hygiene

Food handlers themselves are one of the biggest sources of contamination. This module is about keeping you from making customers sick: washing your hands the right way, handling ready-to-eat food without bare-hand contact, and knowing when you’re too sick to work.

2.1 Handwashing the Right Way

is the single most important thing a food handler does. The whole process takes at least 20 seconds, and the order matters.[7] Wash at a designated handwashing sink only — never in a food-prep or three-compartment sink.

Wash your hands before starting work and putting on gloves, and after using the restroom, handling raw meat, touching your face or hair, sneezing or coughing, taking out garbage, handling chemicals, and any time hands could be contaminated. A may be used after washing — never instead of it.[6]

2.2 Gloves & No Bare-Hand Contact

Food handlers must never touch ready-to-eat food with bare hands.[2] Use , tongs, deli paper, or other utensils. Gloves are not a substitute for handwashing — wash your hands before putting gloves on, and change them when they tear, become dirty, after handling raw meat, or when switching tasks.

2.3 Reporting Illness & Good Habits

If you’re sick, you can make food unsafe. Food handlers must report certain symptoms and illnesses to their manager and may be restricted (kept from working with food) or excluded (sent home).

Report vomiting, diarrhea, jaundice (yellow skin or eyes), a sore throat with fever, and an infected, uncovered wound. The reportable diagnoses are the most contagious foodborne illnesses.

Module 3 · Cross-Contamination & Allergens

Pathogens and allergens both travel from one food to another by the same routes — hands, surfaces, and equipment. This module is about keeping things separated: raw away from ready-to-eat, and allergen-containing food away from a guest who can’t have it.

3.1 Preventing Cross-Contamination

is the transfer of pathogens from one surface or food to another — the classic example is raw chicken juices reaching a salad by way of a shared cutting board, knife, or hands. Prevent it by separating raw and ready-to-eat food and by cleaning and sanitizing anything that touches raw food before it touches RTE food.[2]

3.2 Storage Order in the Cooler

A single rule prevents most storage cross-contamination: store food top to bottom by its minimum internal cooking temperature. Ready-to-eat food goes on top, and the food that needs the highest cooking temperature — raw poultry — goes on the bottom, so its juices can never drip onto anything below it.

3.3 The Big 9 Allergens

An is a protein that triggers an allergic reaction — from hives to life-threatening anaphylaxis. The FDA recognizes the : milk, eggs, fish, crustacean shellfish, tree nuts, peanuts, wheat, soybeans, and sesame, which became the ninth major allergen on January 1, 2023.[5]

For a guest with an allergy, prevent : use clean and sanitized utensils, surfaces, and gloves; prepare the allergen-free dish separately; and tell the guest exactly what is in the food. If you’re not sure, find out — never guess.

Module 4 · Time & Temperature

This is the module with the numbers — and the numbers are the most-tested facts on the whole exam. Master the danger zone and the minimum cooking temperatures here and you’ll answer a big share of the 40 questions correctly.

4.1 The Temperature Danger Zone

The is 41°F to 135°F (5°C to 57°C) — the range where bacteria grow most rapidly, fastest between 70°F and 125°F.[4] The goal of nearly every time-temperature rule is to keep TCS food out of this zone: keep hot food at or above 135°F and cold food at or below 41°F.

When food does pass through the zone, time becomes the control. If TCS food sits in the danger zone for a cumulative 4 hours, it must be thrown out — the clock counts all the time the food has spent in the zone, not just one stretch. Some operations use and discard food on a set schedule.

4.2 Cooking, Holding & Thermometers

Each food has a it must reach (and hold for a set time) to be safe.[3] Check it with a clean, in the thickest part of the food. After cooking, keep TCS food safe by (≥135°F) or (≤41°F).

4.3 Cooling & Reheating

Cooling is where many operations slip up, because hot food passes slowly through the danger zone. Use : cool from 135°F to 70°F within 2 hours, then from 70°F to 41°F within 4 more hours— six hours total. If food doesn’t hit 70°F in the first two hours, reheat it and start over, or throw it out.[2]

When you TCS food that will be hot-held, bring it all the way to 165°F for 15 seconds within 2 hours. Speed cooling with ice baths, ice paddles, shallow pans, blast chillers, and smaller portions.

Module 5 · Cleaning & Sanitation

A clean operation is the last line of defense against contamination. This module covers the difference between cleaning and sanitizing, the three-compartment sink, and keeping pests out.

5.1 Cleaning vs. Sanitizing

5.2 The Three-Compartment Sink

When you wash items by hand, use a in order: wash in detergent and warm water (at least 110°F), rinse in clean water, then sanitize in hot water or a chemical sanitizer solution. Then air-dry — never towel-dry, which recontaminates clean items.

5.3 Pests & a Clean Operation

Pests carry pathogens, so the rules are deny, deny, deny: deny them access, food, and shelter. Keep doors and windows screened and closed, store food and garbage in sealed containers off the floor, clean up spills quickly, and report any signs of pests (droppings, gnaw marks) to your manager so a licensed pest control operator (PCO) can handle it.

ServSafe Food Handler vs. Manager Certification

ServSafe offers two main credentials, and it’s easy to mix them up. This guide covers the Food Handler certification — the entry-level credential for employees.

The ServSafe Manager (Food Protection Manager) certification is a separate, more advanced credential for supervisors, and it’s the one most states legally require an operation to have on site. If you need the manager credential, study with the ServSafe Manager study guide instead.
